Chef Michael Symon Tip – When salting food, add the salt while you are cooking, because it releases the flavors of the food, rather than producing a salty meal. “Make sure everything is seasoned. Add salt to flour, salt to the breadcrumbs, salt to the eggs and of course we season the veal chop. This ensures everything is seasoned right through. If you don’t season what you’re breading in you’re going to get a veal chop that tastes very flat. So season the whole way.”
