The Wisconsin Sharp Cheddar Pimento Cheeseburger

While attending the University of Wisconsin, I fell in love with Wisconsin Sharp Cheddar cheese. In my opinion, the sharper the Cheddar, the better – and Cheddar from Wisconsin cannot be beat. Naturally, this love affair has extended into a favorite family recipe I grew up with in North Carolina – Pimento Cheese.

This sweet and tangy cheese spread was a common occurrence throughout my childhood. Throughout the South, you can find it at restaurants, in the grocery stores and at any gathering. It is perfect on crackers as an appetizer, or between two slices of white bread as a snack – really you can put Pimento Cheese on anything! So when you top a cheeseburger with it, I think that is the best possible combination!  That’s how I came up with this recipe for my Wisconsin Sharp Cheddar Pimento Cheeseburgers.

The heat of the cheeseburger will melt the Pimento Cheese into the burger meat, creating a delicious, melted Wisconsin Sharp Cheddar and grilled meat combination. This burger recipe is pretty basic, because the real star here is the cheese. Enjoy!

Wisconsin Sharp Cheddar Pimento Cheeseburgers

Serves 4


1 pound ground beef (80/20 or 85/15 ground chuck)
2 tablespoons Worcestershire sauce
1/4 teaspoon fresh cracked black pepper
1/4 teaspoon salt
2 tablespoons finely grated onion
1 cup Pimento Cheese spread with Wisconsin Sharp Cheddar cheese

Combine all ingredients in a large bowl. With clean hands, mix all ingredients together. Using your hands, form four equal-sized patties. Place patties between sheets of wax paper in the refrigerator until ready to grill. Grill on gas or charcoal grill until medium. Top with 2-3 tablespoons of Pimento Cheese spread. Mom’s Pimento Cheese

8 ounces grated Wisconsin Sharp Cheddar cheese
1, 4-ounce jar chopped pimentos (drained)
1 teaspoon grated onion
1/2 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard powder
Tabasco and black pepper to taste

In a bowl combine grated Sharp Cheddar cheese, grated onion and diced pimentos, stir well. Add mayonnaise, lemon juice, Worcestershire, dry mustard, black pepper and Tabasco. Mash with a fork until well blended, but still chunky.
