Wisconsin White Cheddar Apple Pot Pies

Looking for a homemade treat for your loved ones for Valentine’s Day? Well, I’ve got one for you that will knock their socks off! Wisconsin White Cheddar Apple Pot Pies made into individual pies for that extra special touch.

Valentine’s Day around our house usually includes the kids and I’m sure it’s that way for lots of parents. So this recipe will make a sweet treat for the whole family or would be great if you are having a couple’s dinner with friends. You could also bake this into a traditional pie. I say do what works for you!

The pie crust is super simple, prepared in the food processor with a touch of Wisconsin White Cheddar. The filling is simple and the apples are cut into small chunks to cook quicker. I added the Wisconsin White Cheddar to the filling also and it adds a creamy backdrop to the tart apples.

Wisconsin White Cheddar Apple Pot Pies

Serves 6
Prep Time: 30 minutes
Cooking Time: 35 minutes

1 cup all-purpose flour
1 tablespoon sugar
1/2 cup cold butter, cut into cubes
1/2 cup Wisconsin White Cheddar cheese, shredded
1/4 cup cold water

6 Granny Smith Apples, peeled, cored and cut into small chunks
3 tablespoons all-purpose flour
1/2 cup brown sugar
2 teaspoons ground cinnamon
1 cup Wisconsin White Cheddar cheese, shredded
1 egg
1 tablespoon water
1 tablespoon natural sugar

Preheat oven to 400 degrees F.

Place flour, sugar, butter, and White Cheddar cheese in bowl of a food processor. Pulse for 30-45 seconds or until mixture is crumbly. Drizzle in water while processor is running, until dough forms a ball.

Shape pie dough into a circle on a lightly floured surface. Roll out with a rolling pin until about 1/4 -inch thick. Using [4 ounce] ramekin, place upside down on dough. Use a sharp knife to trace around the ramekin, repeat 6 times. You may use leftover dough to cut out hearts or other shapes for garnish.

Cut a circle or heart shape from center of each dough circle for a vent. Carefully place each dough circle onto a baking sheet and refrigerate until apples are prepared.

In a small bowl, combine flour, brown sugar, and cinnamon. Place apples in a large bowl and toss with flour and sugar mixture. Stir in shredded White Cheddar cheese. Scoop about 1 cup of filling into each ramekin and top each with cut-out dough circle.

Beat egg and 1 tablespoon water in a small bowl. Brush over pie crust and sprinkle with natural sugar.

Place pies on a baking sheet and bake for 35 minutes. Bake heart shaped crusts for 10 minutes, if using. Allow pies to cool at least 15 minutes before serving. Garnish with pie crust hearts.
