Gold-Star Cheddar Crackers

After-school snacks are serious business at our house. My three boys are always starving the minute they step in the door. I try to keep a variety of snacks around for them, and Wisconsin Cheese is always a favorite. But for a special snack, I make homemade Wisconsin Cheddar crackers with a really great Cheddar cheese spread.

Have you made your own crackers before? It is unbelievably simple, and I’m betting you have all of the ingredients on hand.

Homemade crackers are a treat and they never last long around my boys. On occasion, I double the recipe, and if I’m lucky, I sneak one or two for myself. They are pretty addictive. So, don’t say I didn’t warn you.

For this batch, I cut the crackers into school’s gold stars, but the simple shape is ideal for the upcoming holidays too.

Kids and adults, alike will love the bite of the Wisconsin Cheddar in these cheesy crackers and spread — add a little fruit on the side, and you have a healthy snack or the perfect party appetizers.

Gold Star Cheddar Crackers

1 cup all-purpose flour
1/2 teaspoon sea salt
1/2 teaspoon dry mustard
1/4 teaspoon ground chipotle powder
1/2 cup butter, softened
2 cups shredded Wisconsin Cheddar Cheese
1 tablespoon milk

Preheat oven to 350° F. In a large mixing bowl, add flour, salt, dry mustard and chipotle and stir together. Add butter and cut into flour mixture with a fork. Add cheese and stir until incorporated. Add milk and use your hands or a wooden spoon to incorporate into a dough ball.

Pour dough onto a lightly floured surface and roll to about 1/4 inch thickness. Use a star-shaped cookie cutter to cut out crackers. Carefully place on a greased or lined baking sheet. Re-roll dough as necessary and repeat.

Bake crackers for 15 minutes or until lightly browned. Remove from oven and cool on baking sheet. Store in an airtight container.

Wisconsin Cheddar Cheese Spread

4 oz. Wisconsin Cream Cheese, softened
2 teaspoons stone ground mustard
1/2 teaspoon granulated garlic
1/4 teaspoon sea salt
1/2 cup Wisconsin Cheddar Cheese, shredded

In a medium bowl, mix cream cheese with mustard, garlic and salt. Stir in cheddar cheese until thoroughly combined. Cover and store in refrigerator and remove about 10 minutes before ready to serve.

Serve Gold Star Cheddar Crackers with Cheese Spread.
