Entertaining: Smashed Sweet Potatoes with Wisconsin Blue Cheese and Roasted Pears

I’m always happy when Thanksgiving is on the way – for our family it’s the holiday that’s all about cooking dinner. Thanksgiving is the time to gather around the table, share delicious food and nurture our connections to family and friends.

While the traditional meal is all about the roasted turkey, trimmings and stuffing, my personal favorites are the vegetable sides. Try these Smashed Sweet Potatoes with Wisconsin Blue Cheese and Roasted Pears – matching Wisconsin Cheese and autumn’s produce perfectly.

Smashed Sweet Potatoes with Wisconsin Blue Cheese and Roasted Pears

Serves 6

2 firm green pears, such as Anjou; halved, cored and cut into 8 wedges each
1 tablespoon olive oil
1 tablespoon fresh lemon juice
2 teaspoons sugar
1 teaspoon chopped fresh rosemary
2 pounds sweet potatoes, peeled and cut into 2-inch chunks
Salt
3 tablespoons butter
4 ounces (2/3 cup) Wisconsin Blue cheese, crumbled

Heat oven to 425°F. Toss pears on baking sheet with olive oil, lemon juice, sugar and rosemary.

Roast 10 minutes; turn pears and continue roasting until browned and tender, about 20 minutes total. Add 1 tablespoon water to pan, scraping to loosen caramelized juices.

Meanwhile, put sweet potatoes in large saucepan with 1 teaspoon salt, add water to barely cover. Bring to a simmer, lower heat, cover and cook until tender.

Drain all but approximately 1/4 cup water from sweet potatoes; add butter and gently smash the potatoes to a coarse texture with potato masher or wooden spoon; season with salt to taste. Keep warm.

Transfer potatoes to a serving dish; top with pears and pan juices. Sprinkle with Blue cheese.
