The perfect gift for that special someone this February, or a delicious, crowd-pleasing snack at your game day gathering – whip up a batch of Cannoli Cookie Dip and serve with vanilla wafers. Is it a dessert? Is it a dip? It’s both! And it will disappear before you know it.
Cannoli Cookie Dip
1/4 cup sugar
1/4 cup mini chocolate chips, plus 2 tablespoons, divided
8 ounces Wisconsin Mascarpone cheese
1/4 cup pistachios, shelled and chopped
In a medium-sized bowl, combine sugar, 1/4 cup mini chocolate chips and Mascarpone.
Transfer to serving dish and top with pistachios and remaining chocolate chips.* Serve with vanilla wafers.
*To serve as a cheese ball, transfer sugar, chocolate chip and Mascarpone mixture to a sheet of plastic wrap. Wrap well and form into a ball shape. Freeze for at 1 hour. Remove cheese ball from freezer, remove plastic wrap and roll in pistachios and remaining chocolate chips. Refrigerate until ready to serve.
