Transforming my favorite meals into tasty appetizers is always a lot of fun for entertaining. And as I am a total bacon cheeseburger addict, I thought those flavors would be great as a tasty bite-size snack for an outdoor summer rendezvous. Perhaps they’ll be the highlight of the appetizers at your Fourth of July cookout.

First, I sauté onions, garlic and mushrooms in butter and add half and half and Wisconsin Cheddar to create a fabulous cheese sauce. Stir in crispy bacon pieces, and your taste buds will be singing.

This sauce could certainly be a favorite burger topping in itself. To make little bundles, spoon the filling into the buttery phyllo squares, gather the edges together and pop them into the oven.

They were such a hit that these little bites did not last 10 minutes, no exaggeration, between my family and myself. Everyone was begging for more, which means they will certainly be making an appearance at upcoming summer gatherings.

Wisconsin Cheddar-Mushroom Bundles

Serves 6-8 

8 tablespoons butter, divided
1/3 diced onion
1 garlic clove, minced
4 oz white mushrooms, coarsely chopped
4 oz crimini mushrooms, coarsely chopped
1/2 teaspoon sea salt
1/4 cup half and half
1 cup shredded Wisconsin Cheddar
1/3 cup crumbled cooked bacon
9 sheets phyllo dough, each cut into 8 squares
1/2 cup plum-chipotle sauce, raspberry-chipotle sauce or sweet barbecue sauce for serving

Preheat oven to 350°F. Heat a medium skillet over medium-high heat. Add 2 tablespoons of butter to skillet with onion and garlic and cook, stirring often, until onions are translucent. Add mushrooms and season with salt. Cook until mushrooms are softened, but have not browned. Stir in half and half and Wisconsin Cheddar. Stir until cheese is melted and sauce is smooth. Fold in bacon and remove from heat.

Melt 6 tablespoons of butter and place in a small bowl. Place 1 square of phyllo on a baking sheet and brush lightly with butter. Repeat with 3 more layers, brushing in between. Spoon about 1 tablespoon of bacon and mushroom filling into center, and gather edges and press together to form a bundle.

Repeat with remaining ingredients, placing bundles about 2 inches apart on baking sheet.

Bake for 12 to 15 minutes or until well browned. Serve immediately with chipotle sauce.
