It’s a new month – and a new year – which means we have a new variety of Wisconsin Cheese to unveil as our featured Cheese of the Month. For January, we are highlighting Parmesan’s piquant cousin, Wisconsin Romano. This variety of cow milk cheese has a more assertive and tangy flavor than Parmesan, but a very similar hard texture.
Romano can be substituted in recipes that call for Parmesan or Asiago, such as pastas, salads, soups and pizzas. We recommend giving it a taste in an Italian Wedding Soup or mixed into Roasted Garlic Mashed Potatoes.
