Summer is finally here and this means frequent trips to the neighborhood pool, flip-flops, homemade ice cream, lots of salads and summer grilling.

My family loves grilled meats and vegetables. Grilling is such an easy and delicious way to cook food in the summer. My husband is our resident grill master and manages to always grill everything to perfection.

Juustoleipa (pronounced: hoo-stah-lee-pah) cheese, also known as “bread cheese,” is a great addition to your grilled vegetables. Similar to cheese curds, it has a “squeaky” quality when fresh. Juustoleipa generally has a mild, buttery flavor, and the heat from baking caramelizes the sugars on the outside of the cheese to form a tasty crust similar to brown bread. I love that it’s so unique looking and recognizable.

We grilled the juustoleipa, just for a few minutes on each side until the cheese was softened and warmed through, and served it with our grilled summer vegetables with some balsamic glaze drizzled over everything. Delicious! I highly recommend that you also try a slightly spicier version, like the chipotle juustoleipa, which adds a nice kick.

Alternatively, if you don’t have time to fire up the grill and still want to enjoy some juustoleipa, simply heat it on your stovetop in a pan for just a minute or two until warmed through and serve over a bed of fresh greens. We served our summer juustoleipa salad with strawberries, walnuts and the balsamic glaze. You can also use your favorite (homemade or store-bought) strawberry vinaigrette dressing. It is so good and the perfect summer salad.

Grilled Summer Vegetables and Juustoleipa

For balsamic glaze:

1 cup balsamic vinegar

3 tablespoons maple syrup


For grilled vegetables:

Assortment of large red, orange and yellow bell peppers (approximately 3-4 peppers), sliced in half lengthwise with seeds, stems and white parts removed

1 zucchini, sliced lengthwise into thick strips

1 large or 2 small yellow summer squash, sliced lengthwise into thick strips

1/4 cup vegetable oil

1 cup (8 ounces) Wisconsin juustoleipa cheese or chipotle juustoleipa cheese

Salt and pepper, to taste


Cooking Instructions:

For balsamic glaze:

Using small saucepan over medium heat, bring balsamic vinegar and maple syrup to a boil. Reduce heat to low simmer and cook until thickened, about 10-12 minutes. The glaze should reduce to 1/2 cup. Set aside to cool.


For grilled vegetables:

Preheat grill to medium heat. Brush vegetable oil over all sides of vegetables and place on large platter.


Once heated, place each vegetable directly onto grill, cook for 4-5 minutes on each side, flipping once. Remove zucchini and yellow squash from grill first, leaving bell peppers for 1-2 additional minutes.


Place uncut juustoleipa directly onto heated grill, heating both sides for 3-4 minutes until warmed through. While juustoleipa is grilling, slice grilled bell peppers into long strips and place on serving platter with grilled zucchini and yellow squash.


Remove juustoleipa from grill and cube. Place over grilled vegetables and pour balsamic glaze over everything. Serve immediately.


Note for the cook: You can remove bell pepper skins before serving if desired. The charred bell pepper skins should peel off very easily.


Pan-fried Juustoliepa with Fresh Greens

Servings: 4



10 ounces of fresh greens (spring mix, baby spinach or arugula)

1/2 cup Wisconsin juustoleipa cheese, cubed

1 cup strawberries, sliced

1/4 cup chopped walnuts

Strawberry vinaigrette or balsamic glaze


Cooking Instructions:

Place fresh greens in four serving bowls. Heat cubed Wisconsin juustoleipa in frying pan over medium heat for 2-3 minutes, stirring continuously until cheese is heated through and beginning to melt. Divide heated juustoleipa among bowls of greens and top each serving with strawberries, walnuts and dressing. Serve immediately.
