Servings: 4

Ingredients:For Olive Salad:
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
2 teaspoons minced garlic 1 tablespoon dried
Italian seasoning 1/2 cup black olives, chopped
1/2 cup Spanish olives, chopped
1/2 cup kalamata olives, chopped
1 8-ounce jar roasted red peppers, chopped
1 8-ounce jar Italian mix giardiniera, chopped

 

For Cheeseburgers:
4 8-ounce beef patties
4 ciabatta buns, split and toasted
4 medium-thick slices Genoa salami
4 medium-thick slices capicola (Italian-style  cured deli meat)
4 medium-thick slices mortadella (Italian-style deli meat)
8 slices Wisconsin provolone cheese
8 slices Wisconsin mozzarella cheese

 

Cooking Directions:

 

For Olive Salad: 
In medium bowl, combine vinegar, olive oil, garlic and Italian seasoning. Whisk until combined. Set aside. Chop remaining ingredients, add to bowl. Toss until combined and well-coated. Refrigerate at least 30 minutes or overnight.

 

For the Cheeseburgers: 
Preheat gas grill to high. Sprinkle beef patties with salt and pepper on both sides. Grill patties 3 minutes on first side, until browned and slightly charred. Cook about 5 minutes on second side for medium. Remove from grill and let cool 5 minutes. Cover bottom half of bun with 1/4 cup of olive salad. Place burger on top. Layer on meats and cheeses; top with bun tops.
