Wisconsin blue cheese is our bold and beautiful Cheese of the Month for September. With veins of blue, this variety of cheese is a sight to be seen. However, it is not for the faint of palate, as the veins are a result of mold cultures, which infuse the cheese with an earthly, piquant taste.
Blue cheeses can be soft and creamy or firm and crumbly depending on age, moisture content and temperature. That boldness pairs well with sliced fruits and nuts, and makes an excellent topping on salads, sandwiches and red meats. Serve with a full-flavored Pinot Noir or Port for a savory pairing.
