Throwing together a beautiful cheese board in summer is almost too easy with such an abundance of fresh produce. For our summer cheese board, we selected three of the most versatile varieties – Wisconsin Swiss, colby-Monterey Jack and creamy ricotta.
- Wisconsin Swiss is a full-flavored, nutty cheese with characteristic holes called “eyes.” It pairs well with fruit, savory meats and fruity wines such as a bright floral Riesling.
- Wisconsin colby-Monterey Jack is a mixture of colby and Monterey Jack cheeses. Mild in flavor and texture, it goes well with almost any charcuterie you can find. From prosciutto-wrapped green beans to fresh raspberries, colby-Monterey Jack is adaptable to any flavors you or your guests prefer.
- Wisconsin ricotta is often overlooked on cheese boards because it isn’t in the traditional table cheese form of a wedge or block. But, its creamy, buttery taste is an excellent option for simple summer pairings. You can spread ricotta on crostini and top with fresh herbs, pesto or fruit slices for a burst of seasonal flavor.
