What inspires your burger building? A perfect patty is like a blank canvas calling our inner Picasso to create an adventure for our taste buds. Start with the basics, let the possibilities of taste and texture run wild in your imagination, and see what you can come up with! In this case, I used some delicious Wisconsin baby Swiss and colby to experiment, and I was toying with the cheese combo – the nutty flavor of Swiss mingling with the smooth creaminess of colby. How could I make both shine?

I went with a traditional pan sauté for the baby portobello mushrooms, a perfect pairing with the Swiss. Then I roasted some tater tots to a crisp with diced onion and tossed them with shredded colby to create a savory melted cheese coating. I piled it all on top of a simple wheat bun with a dab of mayo and lettuce. When you bite into this burger, you’ll find both cheeses are highlighted and the flavors mingle effortlessly. The Spud Muffin

Ingredients:

For Tater Tots:

1 bag frozen tater tots

1/2 large onion, diced

2 cups (8 ounces) shredded Wisconsin colby

 

For Burger Patties:

1 1/4 pound lean ground beef

1 tablespoon Worcestershire sauce

1 tablespoon burger seasoning

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

4 slices Wisconsin baby Swiss cheese

 

For Mushrooms:

1 tablespoon butter

8 ounces baby portobello mushroom caps, wiped clean

 

To Assemble:

4 wheat buns, split

Mayonnaise, to taste

4 large green lettuce leaves

 

Cooking Directions:

 

For tater tots: Preheat oven according to package directions and arrange tater tots on baking sheet. Bake according to directions for crispy tots. In last 5 minutes, add diced onions. After 5 minutes, sprinkle shredded colby over tots and return to oven for 30-60 seconds until cheese is melted. Toss to combine, covering tots with cheese. Keep warm.

 

For burger patties: Preheat grill over medium heat. Mix beef with Worcestershire sauce, burger seasoning, salt and pepper. Form into 4 patties. Using your thumb, make an indent in center of each patty. Grill burgers until desired doneness. Place slice of Swiss over patties; when cheese begins to melt, remove patties from grill.

 

For mushrooms: Place small skillet on side grill burner or grill top. Melt butter in skillet; add mushroom caps and sauté until liquid has evaporated and they have browned all over.

 

To assemble: Toast inside of buns on grill. Smear bun bottoms with mayonnaise, if desired. Arrange lettuce leaves over. Top with burger patties, mushrooms and cheesy tater tots. Finish with top bun. Stick toothpick through tops to secure, if desired. Serve immediately.
