8 ounces (1 cup) Wisconsin quark, room temperature
1/4 cup fresh dill, finely chopped
2 tablespoons rice vinegar
2 tablespoons fresh lemon juice
1 tablespoon honey
2 medium cucumbers, sliced into 16 pieces
8 ounces smoked salmon or lox, sliced into 16 small pieces
Fresh dill sprigs, for garnish, optional
Mix quark, dill, vinegar, lemon juice and honey in small bowl, stirring until ingredients are evenly distributed.
Spoon 1 tablespoon quark mixture onto each cucumber slice and top with piece of salmon. Add additional dill sprigs for garnish, if desired.
