Over at All Things Mac & Cheese, we’ve come up with hundreds of ways to make the creamy comfort food your family craves. But before you settle on a recipe for your next batch, here are some tips to ensure it’s your best yet.
Picking the Right Cheese
When it comes to macaroni and cheese, meltability is key. We recommend starting with a semi-soft cheese variety. Think Wisconsin colby, havarti, gouda, mozzarella or fontina. Next, you’ll want to add a sharper cheese to build additional flavor. We love parmesan, asiago, an aged cheddar, alpine-style cheese or even a blue cheese to give that extra oomph. Check out a step-by-step video on how to choose the right cheese.
Classic Mac & Cheese Sauce
You can’t have the perfect macaroni and cheese without perfecting the sauce. Start with melted butter and whisk in flour to create a roux. Cook for about 1 minute to get rid of any raw flour flavor and then slowly add the mix, whisking frequently until thickened. Add salt and pepper, reduce heat to low and mix in handfuls of shredded cheese. It’s just that simple! See for yourself here.
