Now that I’m a mother of two young children, my dinnertime routine has changed dramatically. Gone are the days when my husband and I could spend an hour or more in the kitchen together, cooking, chatting and sipping wine.

Now it’s more of a balancing act of keeping the kids happy while I throw a meal together. Quick and easy is the name of the game, and I’m always on the lookout for simple recipes or ways to make some of our favorites simpler.

Pizza night is a family staple that I’m not willing to give up no matter how crazy our lives get. Sometimes I remember to make homemade pizza dough ahead of time, but not always. And on those nights I am grateful for shortcuts like French bread pizza.

This meal couldn’t get much simpler. It’s just a loaf of French or Italian bread (whatever you can find at your grocery store will do), sauce, cheese and your favorite toppings. It bakes in the oven just until the cheese melts and boom, dinner’s ready. Serve it with a big salad and you’re good to go.

While the flavor options for these quick and easy pizzas are endless, I’m partial to this tomato and pesto combination. It just doesn’t get much better than when tomatoes, basil and mozzarella are put together. So simple, yet so much flavor!

Tomato Pesto French Bread Pizza

Servings: 4-6
 
Ingredients:
 
1 loaf French or Italian bread, cut in half lengthwise
1/2 cup pesto
8 ounces Wisconsin fresh mozzarella cheese, sliced
2 cups (8 ounces) Wisconsin parmesan cheese, shredded
2-3 large tomatoes
1 teaspoon freshly ground pepper
1 small bunch fresh basil
 
Cooking Directions:
 
Preheat oven to 425°F.
 
Place bread on large sheet pan, cut side up. Toast in oven for 5 minutes.
 
Spread pesto on bread. Top with mozzarella cheese slices and shredded parmesan cheese. Return to oven and

bake until cheese is melted and edges of bread are golden, about 15 minutes.
 
Top with ground pepper and basil leaves. Slice and serve immediately.
