We have gotten a lot of snow this year. Thankfully, it has mostly come at times that didn’t affect the kids getting to and from school. We did have a snow day recently, and it was kind of nice to have a day off in the middle of the week with my 10 year old. I was able to play hooky from work for part of the day, and we got to hang out together. What did we do? Made cookies and devoured this bacon cheeseburger dip.

My 10 year old has a huge soft spot for bacon. I mean, who doesn’t? But if bacon is involved, the boy is super excited! So when I asked if he wanted to help make a bacon cheeseburger dip that we could have for lunch, he was all over it. I can’t always get him in the kitchen with me, but cheese and bacon won him over. Not to mention, this dip is so easy to make he could have done it all by himself!

For this recipe, I used Wisconsin cheddar cheese and Wisconsin cream cheese to make it super creamy and delicious. Bacon Cheeseburger dip is easy to throw together anytime you have friends over or need to bring something to a party. Just mix it all together and throw it in the slow cooker or heat it in the oven until it is warm and melted. You get all the flavors of a bacon cheeseburger, but in a creamy dip. What’s not to love?

Bacon Cheeseburger Dip

Ingredients:
 
1 pound ground beef
1 8-ounce package Wisconsin cream cheese
1 cup sour cream
2 cups (4 ounces) Wisconsin cheddar cheese, shredded
1 10-ounce can diced tomatoes with green chilies
2/3 cup crumbled bacon
 
Cooking Directions:
 
Preheat oven to 350°F.
 
In skillet, brown ground beef, breaking apart until cooked through.
 
In large bowl, combine cream cheese, sour cream, cheddar and tomatoes. Add ground beef and bacon. Mix well. Pour mixture into baking dish and bake 20 to 25 minutes until bubbly and hot. Top with additional crumbled bacon. Serve hot with corn chips for dipping.
