Warm Brie with Strawberry, Basil and Balsamic Salsa

We’ve long-loved pairing a melty wheel of Wisconsin brie with seasonal fruit toppings, whether it’s gingered pears or even chocolate and cranberries. And with strawberry season is coming soon, we’ve found a new favorite to add to the rotation.
Ripe strawberries. Fresh basil. Sweet, tangy balsamic vinegar. Warm, gooey Wisconsin brie. This is a combination like no other.

This simple salsa comes together quickly, but owes its full flavor to fresh basil and a drizzle of high-quality balsamic vinegar. A dash of lemon juice balances the bite, and the delicious end result is poured over a lightly-baked brie and served with hearty crackers. What’s left to say but “Enjoy!”?


Warm Brie with Strawberry, Basil and Balsamic Salsa

Servings: 4-6

1/2 pint (8 ounces) strawberries; hulled and cut in small pieces
1 tablespoon fresh basil leaves, finely chopped
1 tablespoon balsamic vinegar
1 teaspoon sugar
1 teaspoon fresh lemon juice
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 8-ounce wheel Wisconsin brie cheese
Whole grain crackers
Combine strawberries, basil, balsamic vinegar, sugar, lemon juice, pepper and salt in bowl. Mix well. Let sit at least 15 minutes before serving to allow flavors to fully develop.
Meanwhile, heat oven to 350°F. Place brie on foil-lined baking sheet and bake until warmed through, but not completely melted, about 5-7 minutes.
Stir strawberry salsa mixture and spoon over warm brie. Serve with crackers on the side.
