Watermelon and Asiago Appetizer

We’re big fans of the sweet/salty combination of watermelon and cheese. Need a crowd-pleasing salad? Pair fresh watermelon with feta, burrata or queso fresco. A show-stopping dessert? Top it with white chocolate mascarpone.

Today, we’re making Watermelon and Asiago Bundles – a stunning summer appetizer with just five ingredients. Wrap sticks of watermelon and Wisconsin asiago in strips of prosciutto, secure with fresh chives and sprinkle with black pepper. It’s that simple.

Pair them with a crisp rosé wine and savor the flavors of summer.

Watermelon and Asiago Bundles

Servings: 10

1/2 medium watermelon
1 block (8 ounces) Wisconsin asiago cheese
10 thin slices prosciutto
10 chives
Freshly ground black pepper to taste

Cut watermelon into 10 1/2×3-inch sticks. Cut asiago into 10 1/2×3-inch sticks. Place 1 asiago stick on top of 1 watermelon stick; wrap sticks around middle with 1 slice prosciutto. Repeat with remaining watermelon and cheese sticks.

Gently tie 1 chive around each bundle.* Arrange on cutting board or serving platter and garnish with freshly ground black pepper. Serve immediately.

*If chives aren’t long enough to tie, chop and sprinkle over top of watermelon and asiago bundles.
