The Bacon-Wrapped Cheese Curd Bun Cheeseburger

Makes 1 burger (which can easily feed two people)
The inspiration came from a recent burger I made that had deep fried wheels of cheese for a bun, but it surpasses that burger in a couple different ways. Number one, instead of a wheel of cheese I used fresh cheese curds and two, the cheese curds are wrapped in bacon before being deep fried!
10 slices bacon
1 pound Wisconsin cheese curds
1/2 pound ground beef
Freshly ground pepper
1 slice Wisconsin cheddar cheese
2 quarts oil for frying
Place 5 bacon strips across bottom of mini springform pan (or small, shallow dish, 4-5 inches in diameter) in a criss-cross fashion, leaving no open spaces.
Cover bottom of pan with half the cheese curds and fold bacon slices over top of cheese curds. Remove from pan. Repeat process with remaining bacon and cheese curds.
Heat oil in deep fryer or Dutch oven (oil should deep enough to completely cover buns, about 3-4 inches) to 375°F and fry bacon-wrapped cheese curds “buns” for approximately 3 minutes or until the bacon is crispy. Place buns on paper towels and set aside.
Form ground beef into a patty; season with freshly ground pepper and kosher salt. Grill to desired doneness.
Top burger with cheddar slice and serve with lettuce, tomato or other desired toppings between the two bacon-wrapped cheese curd buns.
