Nacho Fried Cheese Curds

Deep fried cheese curds are pretty great no matter what. It doesn’t matter if you dip them in beer batter and deep fry them or if you coat them with panko breadcrumbs— either way, they’re going to turn out amazing. But a nacho flavored breading with Doritos® is a treat on its own level.
This isn’t the first time I’ve used Doritos as a breading. I’ve previously crushed the tortilla chips up and used them to bread everything from chicken strips to burger patties. It always worked out so well that I figured I might as well try breading some cheese curds with them too. As expected, they were just as delicious!

2 quarts (8 cups) oil for frying
1/2 cup milk
6 eggs
1 pound (16 ounces) fresh Wisconsin cheese curds
2 cups flour
1 bag (10-ounces) nacho flavored Doritos® chips, crushed into crumbs
Ranch or other sauce for dipping
Heat oil in deep fryer or heavy skillet to 375°F.
Combine milk and eggs in bowl; whisk until smooth.
In another bowl, toss cheese curds with flour to coat. Place Dorito crumbs in third bowl. Dip cheese curds in egg mixture; then roll in Dorito crumbs to cover. If curds need additional coating, dip again in egg mixture and Dorito crumbs.
Fry cheese curds in batches for approximately 60 seconds each batch.
Drain on paper towels. Serve immediately with ranch or your preferred dipping sauce.
