Thanks to Wisconsin’s long tradition of award-winning cheesemaking, there are a wide variety of beautiful and delicious Wisconsin cheeses to choose from when creating your own wedding cheese cake.
Many cheese shops are hip to this trend and will create a custom cheese wedding cake for your big day. If you’re going the DIY route, you can make your own with a few simple garnishes.

Step 1: Select Your Wheels
First and foremost, you want to select cheeses that you love to eat and are excited to share with your guests. Just like when you’re building a cheese board, it’s nice to have some variety in flavors and styles. If you need some guidance, get advice (and samples!) from your local cheesemonger. Also think about the size and height of the wheels. You’ll want to create a tiered effect with the largest wheels on the bottom and smallest on top.

Step 2: Embrace the Beauty of Rinds
The wonderful thing about building a wedding cake out of cheese, is that they don’t require a lot of decorative work. Whether it’s a cave-aged cheddar, washed-rind alpine style or a bloomy rinded brie, cheese rinds have beautiful natural textures, often in neutral colors that will work well with any color scheme. You don’t need more than a few fresh flowers, greenery or even fruit to transform them into a wedding-worthy cake. You can also wrap them in simple ribbons, lace or burlap strips, if that’s more your style.

Step 3: Make a Serving Game Plan
Think about how you’ll serve the cheese once the cake is presented. If you prefer to keep the cake intact throughout the reception, you (or your caterer) can purchase additional cheese to serve on individual cheese plates alongside your cake display. With this option, you’ll likely be able to save the cheese wheels from your cake for another use – an epic post-honeymoon cheese party, perhaps.
If you’d like to serve the cheese from the cake at the reception, you can work with your caterer (or enlist a friend with some cheesemonger skills) to break down the wheels for serving after it’s been displayed. A third, less labor-intensive option is to cut a wedge out of each wheel and allow guests to serve themselves. Some disassembly may be required, and this option is likely to get a bit messy, but can also be fun for guests.
