Creamy Strawberry Dip

There’s always a reason to gather in the springtime—from wedding showers to graduation parties, celebratory brunches to picnics in the warm sunshine. Every good party requires an equally good dip, and we promise, this Creamy Strawberry Dip satisfies.

This easy peasy party dip couldn’t be simpler to whip up. All you need is four ingredients: Wisconsin cottage cheese, strawberries, sugar and orange peel.

Fresh, all-natural cottage cheese is one of those chameleon ingredients that’s endlessly flexible. Most of us eat it plain or alongside fresh fruit, but Wisconsin-made cottage cheese boasts a milky flavor and creamy texture that makes it an ideal base for dips. It packs protein (13 grams per ½ cup!) and good-for-you nutrients, and when blended, turns lusciously smooth.

Give all four ingredients a quick whir in the blender, and you’ve got a pink-hued, multi-purpose party dip. We tend to favor lighter flavors when the weather turns warm, so serve it with fresh fruit (strawberries, mango, pineapple and bananas) for dipping. Or, for a seasonal dessert, scoop it over angel food cake and top with fresh berries.

P.S. On the rare chance you have leftover strawberry dip, it makes an excellent topping for pancakes or waffles in the morning.

Creamy Strawberry Dip
Servings: 1 1/2 cups
1 cup (8 ounces) cream-style large or small curd cottage cheese
1 cup strawberry slices, divided
1 to 2 tablespoons sugar
1/4 teaspoon grated orange peel, optional
Place the cheese, 1/2 cup of the strawberries, and sugar in a blender container. Cover and process on high until smooth. Add the remaining strawberries and orange peel, cover, and process on and off just until the berries are chopped. Chill. Serve as a dip for fresh fruit or over pound cake or angel food cake slices.
