Easy Bowl Recipes for Summer Meal Prep

Meal prep is a great way to ensure fresh, homemade meals throughout the week. With a little planning and prep work, you can spend minimal time in the kitchen on those busy weeknights.

Start your day with a homemade smoothie bowl with Wisconsin ricotta. For lunch, choose a DIY hummus bowl with flavor-packed marinated Wisconsin feta or the ultimate Wisconsin bowl with fresh cheese curds. Dinner is time to play with Funny Face Taco Bowls. Create your own design with Wisconsin colby jack cheese and fresh veggies.

Smoothie Bowl

Blueberry Ricotta Smoothie Bowl
Fresh Wisconsin Ricotta adds a creamy texture and extra protein to this easy smoothie bowl. Top with your favorite fruits, nuts or granola.

Meal Prep Tip: Keep your blueberries fresh all week with a vinegar bath to prevent mold growth. As soon as you get them home from the store, place them in a bowl with 3 cups water and 1 cup white vinegar. Drain in a colander and rinse under cold water. Spread onto paper towels to dry completely. Store refrigerated in resealable containers lined with paper towels.

Hummus Bowl

Build a homemade hummus bowl packed with fresh flavors and lots of color and crunch. Wisconsin feta marinated in fresh thyme and red chile flakes is paired withs roasted chickpeas, hummus, fresh veggies and pita chips. Lunchtime never looked so good.

Meal Prep Tip: Make a big batch of marinated feta to keep on hand all week. In addition to this delicious lunch bowl, it can be added to other salads or pastas, or spread onto toasted baguette slices for an easy appetizer.

This salad bowl highlights the best of Wisconsin flavors, starting with fresh, squeaky Wisconsin cheese curds. Pair those with Wisconsin-grown wild rice, dried cherries and apples. Round it out with sliced red onions, mixed greens and a red wine vinaigrette. Who said salads have to be boring?

Meal Prep Tip: Wild rice can be made in a big batch and kept in the refrigerator throughout the week. If your cheese curds start to lose their squeak after a couple of days, pop them in the microwave for a few seconds to bring the squeak back.

Funny Face Taco Bowl
Kids of all ages will love transforming their dinner into playful faces. Start with white rice, black beans, ground beef and shredded Wisconsin colby jack cheese. Serve with an assortment of veggies, sour cream and tortilla chips for topping/decorating. Go ahead, play with your food!

Meal Prep Tip: The rice and ground beef can be prepped ahead and kept refrigerated for several days. Drain and rinse the beans and keep in a resealable container so they are ready to use. If you’re shredding your own cheese, you can prep in a large batch and keep refrigerated in a resealable bag.
